Our Favorite Cheesy Chicken Enchiladas


Alright y'all, here's the first recipe.  Hope you enjoy it as much as we do!  Love getting new recipes, so please feel free to comment back with links to your favorites.
 
Cheesy Chicken Enchiladas

(Makes 10 large enchiladas)

4 medium (or 3 large) boneless skinless chicken breasts
½ large yellow onion, diced
1 fresh jalapeno pepper, seeded & finely minced
¼ cup cilantro, minced
1 (7oz) can chopped green chilies
1 (10.5oz) can cream of chicken soup
1 (16oz) package of finely shredded cheddar or Mexican style cheese (get the one with Philly cream cheese mixed in)
16 oz tub light sour cream, divided
Garlic salt, to taste
Milk (about ¼ cup)
10 white flour tortillas (soft taco size)

  • Preheat the oven to bake the chicken.  Season raw chicken with garlic salt & black pepper.  Bake the chicken breasts until fully cooked.  In the meantime, sauté onion & jalapeno pepper until soft.  Once chicken is cooked, shred or chop the chicken into tiny pieces.   
  • Lower the oven temperature to 325 degrees.  Grease a 9”x13” pan lightly with butter. 
  • In a large bowl, mix together chilies, soup, garlic salt, shredded chicken, cilantro, onions, and peppers. Add one cup of sour cream and one cup of shredded cheese. Stir until combined.  Roll up a few heaping tablespoons of mixture into each tortilla. Place rolled enchiladas (seam side down) into the 9x13 pan.  It will be a tight squeeze.
  • Mix remaining sour cream, a heavy sprinkle of garlic salt, and milk (I do this right inside the sour cream container).  Add more milk if needed to get a saucy consistency. Spread sour cream sauce evenly on top of each enchilada.
  • Cover pan with foil and bake at 325 degrees for 30-35 minutes.  Take enchiladas out of oven, remove foil, and sprinkle the top with shredded cheese.  Don’t be shy!  Bake uncovered for an additional 5 minutes, or until cheese is melted.  
  • I serve mine with salsa and guacamole on the side to eat with chips or for topping.  I posted a good salsa recipe here that we love to make.  I want to try this Mexi rice recipe soon for a good side with these.  Enjoy!  ;)
